I remember the first time I had a caramel apple. I must have been about 7 years old at a school fair, I saw the gooey caramel dripping from the apple and begged my mother for it. She gave in and I looked at it, not knowing what to do with it. “Bite it,” she said.

It was sweet, it was tart…and it ended up all over my face, shirt and hair.

But that’s the catch – unless you’re eating highly processed caramel that hardens at room temperature, there is no clean way to eat a caramel apple.This is not a first date snack, caramel apples should only be eaten with those you don’t mind seeing you covered in sticky sweetness.

caramel apples: the possibilities are endless

I love different things about each season, but when falls rolls around again I am always excited about the autumn harvest. Squash and gourds, apples and pears – I can’t get enough of fall foods and flavors. And caramel apples are one of my favorite fall treats because of their versatility.

When creating this recipe I toyed with many toppings variations and it was difficult to narrow it down, but simplicity always wins out for me. I love the combination of salty, crumbled pistachios over the sweet caramel and tart green apples. But the caramel apple topping possibilities are truly endless, and some of my favorites that didn’t make the cut include:

  • Crumbled pecans with cinnamon and brown sugar
  • Toasted almonds with shaved chocolate (!)
  • Butterscotch and chocolate chips
  • Crushed Oreos or M&Ms (or both!)
  • Coconut flakes
  • Popcorn
  • Crushed pretzels (for a salty and sweet flavor)

While this recipe is super simple to make (under 10 minutes!), I struggled a bit at first with the proper way to dip the apples without getting the caramel everywhere. In in the end I realized this is nearly impossible and you must embrace that your kitchen will be a sticky mess, but below are a few tips I learned after some trial and error.

  • Choose a thick stick without a sharp point. I made this mistake when testing the recipe. I bought thin sticks with a very sharp point and the apple spun around the end of the stick and it was near impossible to dip and turn in the caramel. Choose thick sticks with a blunted point to make dipping easy. You can also try these cute branch sticks, because using real branches is not recommended no matter how cut the pictures look (it was a nightmare to shoot, let’s just say that).
  • After dipping in caramel, place apples upright on a baking cooling rack. This was a great Pinterest tip I found and it definitely works. Choose a tall baking cooling rack or short glass/coffee mug that will hold the weight of the apple and let caramel cool while apple is stick down. This allows the caramel to cool and become as hard as possible without messing up its beautiful coating.
  • Roll apples over crushed toppings on wax paper. If you’re rolling your apples (I dusted mine, but rolling would work well for thicker toppings pieces) place crushed toppings on a piece of wax paper and roll caramel apples over paper to reduce mess. When done just compost or recycle the paper – easy, peasy cleanup!

Ingredients

  • 4 green apples
  • 6-8 ounces caramel
  • 2 ounces peeled pistachios
  • 4 thick wooden sticks

Instructions

  1. Wash and dry apples, remove stem and place stick halfway in apple.
  2. Crush pistachios in a small bowl or with a mortar and pestle, and place on top of wax paper.
  3. Heat caramel over medium-low heat until it thins, then dip apple to coat all sides evenly. Hold apple over caramel to allow excess to drip off.
  4. Place apples stick-side down in a cooling rack or short mug/glass to allow caramel to cool and harden.
  5. When caramel has cooled, roll apples over pistachios or stand them upright and sprinkle pistachios on top.
  6. Serve immediately and enjoy!

Notes

Leftovers & Storage: Apples can be stored at room temperature for 2-3 days and longer if refrigerator.
